New Mexico has a unique cuisine of its own, with red and green chile at its heart.

Albondigas soup - This meatball soup is a great main course and the trick to perfect albondigas soup is to put chopped mint leaves into the meatballs.

Atole - Atole is a traditional cornstarch-based Mexican and Central American hot drink typically accompanied with tamales, and very popular during the Christmas holiday season.

Bischochitos - Also known as biscochos are the state cookie of New Mexico and have a long tradition in the state.

Capirotada - Capirotada is a common Mexican bread pudding that is traditionally eaten during Lent.

Carne Adovado - Carne Adovada is a traditional New Mexico pork dish in chile caribe marinade.

Chalupas - Chalupas are tostada platters made by pressing a thin layer of masa dough around the outside of a small mold and then deep frying it to produce a crisp shallow corn cup.

Chicharrones - Chicharrones are usually made with different cuts of pork, but sometimes made with ram meat.

Chile - This is a very popular dish in the Southwest and has many different variations.

Chile Rellenos - This dish consists of a roasted fresh green Anaheim or poblano chile pepper stuffed with a melting cheese, such as queso, and/or picadillo meat made up of diced pork, raisins and nuts, seasoned with canella meat, covered in an egg batter, and fried.

Green Chile Stew - A New Mexican favorite on cold winter days.

Menudo - A restorative stew of humble origin and ingredients. This wonderfully aromatic soup is made of tripe, hominy and chile, and is stewed for hours with garlic and other spices.

Natillas - A custard dish typically made with milk, sugar, vanilla, eggs, and cinnamon.

Panoche - A fudge made with brown sugar, butter, milk and nuts.

Posole - A spicy corn stew known as the ceremonial dish for celebrating life's blessings.

Tamales - A celebratory food, special tamales are regularly prepared for celebrations and feast days ranging from Christmas, New Years and Day of the Dead to weddings, christenings and birthdays.
